  1. Prepare 4 egg (separate white egg, yolk)
  2. Prepare 100 g Cane sugar
  3. Take 90 g Bread flour (Strong flour)
  4. Take 84 g Honey

The name is derived from Portuguese Pão de Castela, meaning "bread from Castile". All-purpose flour or cake flour can be also used but we recommend using bread flour to help create a moist and kind of gooey texture. Instructions to make Japanese Castella Cake:
  1. Add sugar bit by bit to white egg and whisk until stiff peaks form.
  2. Add egg yolks, honey.
  3. Change to spatula, add sieved flour mix slowly not to break the egg white.
  4. With preheat oven, bake for 10mins @180℃, then 20mins@150℃.
  5. Take off from the tin, wrap it tightly(not too tight) when it's still warm. Best to leave it for 1-2 days in room temperature to get moisten.
  6. Eat!
