The ingredients needed to make Chicken Ropa Vieja:
  1. Take 4 chicken breasts
  2. Take 1 onion sliced
  3. Get 1 each red/green pepper sliced
  4. Get 1 tsp cumin
  5. Take 4 garlic cloves diced
  6. Make ready 1 small can tomato sauce
  7. Make ready 8 sliced olives
  8. Take 1 bay leaf
  9. Get 1 cup chicken broth
  10. Make ready 2 T olive oil to saute veggies
  11. Make ready 1 T fresh cilantro
  12. Make ready 2 sazon with culantro packets
  13. Prepare to taste Salt and pepper

Instructions to make Chicken Ropa Vieja:
  1. Cook chicken in pressure cooker, in chicken broth, sazon and bay leaf. Keep stock after cooking
  2. Sauteed peppers and onions in oil until soft. Add garlic, cook 30 seconds. Add tomato sauce, cumin and olives. Add broth from pressure cooker.
  3. Shred chicken with forks, add to pan and incorporate to sauce.
  4. Serve with white rice (basmati) avocado and tostones (fried seasoned plantains)
