The ingredients needed to make Caribbean Fish and Rice:
  1. Take 4 oz tilapia
  2. Prepare 1/3 cup rice
  3. Prepare 1/4 cup celery
  4. Prepare 1/8 cup portabella mushroom
  5. Take 1/8 cup red pepper
  6. Get 1/8 cup onion
  7. Prepare 1 1/2 tbsp lemon juice
  8. Get 1 tbsp orange concentrate
  9. Take 1 tbsp Carribean-Jerk sauce
  10. Get 1/4 tsp ground black pepper
  11. Get 1/8 tsp garlic salt
  12. Get 1/8 tsp onion salt
  13. Make ready 1/8 tsp cayenne pepper

My rice was cooked in salted water. Remove lid and add coconut milk, pepper flakes, water, oregano, rosemary and salt fish stirring ever so gently add salt and pepper to taste. I usually serve this with a simple green salad and hot sauce on the side. Heat oil in a large saucepan and add coconut.

Instructions to make Caribbean Fish and Rice:
  1. Bring pot of water to a roiling boil, add rice, and cook for 35-40 minutes until desired texture is reached.
  2. Wash veggies. Dice and set aside.
  3. In small mixing bowl, combine orange concentrate, Carribean-Jerk sauce, and lemon juice. Whisk together.
  4. Season fish with garlic salt, onion salt, black pepper, and cayenne pepper. Add to frying pan over low heat and cover. Cook until fish reaches 155°F.
  5. When fish and rice finish cooking, remove fish from heat and plate. Wipe out frying pan, and return to heat.
  6. Drain water from rice, mix in sauce and veggies. Add to frying pan, cover, and cook for 4-5 minutes. Remove from heat and plate next to fish

I usually serve this with a simple green salad and hot sauce on the side. Heat oil in a large saucepan and add coconut. Cook, stirring constantly until very lightly browned Add minced onion.
