  2. Get 1 1/4 cups oats
  3. Make ready 1/4 cup sugar or sugar substitute
  4. Take 1 tbsp baking powder
  5. Get 1/4 tsp salt
  6. Prepare 1/2 tsp xanthum gum, if using gluten-free flour
  7. Prepare 1/3 cup margarine
  8. Get 6 oz. (1 1/3 cup) diced dried mixed fruit
  9. Take 1/2 cup soy milk or milk of your choice
  10. Take 1 egg, lightly beaten (or equivalent of egg substitute)
  11. Get 1 tsp sugar or sugar substitute
  12. Prepare 1/8 tsp cinnamon

Steps to make Fruited Oat Scones:
  1. Heat oven to 375 degrees.
  2. Combine flour, oats, sugar, baking powder, salt, & xanthum gum.
  3. Cut in margarine until mixture resembles course crumbs. Stir in fruit.
  4. Add milk & egg. Mix just until moistened.
  5. Shape dough to form a ball.
  6. On lightly greased cookie sheet, pat out dough to form 8 inch circle.
  7. With sharp knife, score round into 12 wedges.
  8. Sprinkle with combined sugar & cinnamon.
  9. Bake 20-25 minutes or until golden brown.
  10. Break apart & serve warm.
