The ingredients needed to make Banana Bread:
  1. Get 120 g egg (2*60g)
  2. Make ready 80 g brown sugar
  3. Make ready 1/4 tsp salt
  4. Make ready 240 g mashed ripe banana
  5. Get 200 g bread flour, sifted
  6. Prepare 40 g Cake flour, sifted
  7. Prepare 8 g baking soda
  8. Make ready 80 g melted butter
  9. Make ready 40 g oil
  10. Get 80 g condensed milk
  11. Prepare 1 tbs Rum

Store overly-ripe bananas in the freezer until you have enough to make bread. Cut up thick slices of the bread and freeze them for a lunch box treat or for an on-the-go breakfast, toasted and spread with peanut or almond butter. Instructions to make Banana Bread:
  1. Grease and flour 8 nonstick rectangle carbon steel muffin pan (5.59cm) or 85 inch loaf pan.
  2. Preheat the oven at 170oC.
  3. Mix dry ingredients: flours, baking soda and salt.
  4. In a large bowl mix wet ingredients: egg, sugar, rum, melted butter, oil, banana, condensed milk, until combined. Combine the dry into the wet, 1/3 at a time, being careful not to over mix! (Or you will have tough bread!)
  5. Bake for 40- 45 minutes or until a toothpick comes out clean. If bread starts to brown too much on the top, cover with foil and continue to bake until cooked through.
  6. Cool on rack.
  7. Slice into thick slices and serve.
  8. Note: You can add 40g of bittersweet chocolate, and 40g of Pecans or Walnuts after mixing flour for another choice.
