The ingredients needed to make My Tourtiere:
  1. Make ready 1 lb lean ground beef
  2. Make ready 1 lb ground pork
  3. Prepare 2 cloves minced garlic
  4. Prepare I medium onion chopped fine
  5. Prepare 2 tsp salt
  6. Make ready 1/4 ground cloves
  7. Prepare 1/4 ground pepper
  8. Make ready 1/4 dried thyme
  9. Take 1/4 tsp dried sage
  10. Take 1/2 tsp celery salt
  11. Take 1 bay leaf
  12. Get 1 tbsp Worcestershire sauce
  13. Prepare 1/2 cup beef stock
  14. Prepare 2 medium potatoes,peeled,chopped, boiled & mashed (1 cup or so)
  15. Take 1 (9 inch) double crust pie shell

Instructions to make My Tourtiere:
  1. Simmer all the ingredients except the mashed potatoes on low for 2-3 hours, stirring occasionally.
  2. Remove the bay leaf. You don't want the meat to be bone dry but there should be no liquid at the bottom. If it is too dry just add a bit of water. Cool completely.
  3. Fill the pie plate with the cooled meat mixture. Cover with the top part of pastry and seal the edges. Make an egg wash and brush on the pastry
  4. Bake at 400f for 10 minutes then reduce heat to 350 for another 40-50 minute bake. Serve warm
