The ingredients needed to make Chorizo and mushroom Quiche:
  1. Take 1 store bought short crust
  2. Make ready 4 eggs
  3. Take 1 cup heavy cream
  4. Make ready 2 chorizo sausages
  5. Get 1 cup chopped mushrooms
  6. Prepare 1-2 shallots
  7. Take to taste Salt and pepper
  8. Prepare 1 cup mozzarella

Add the chorizo and cook until golden brown. Remove with a slotted spoon to a plate lined with paper towels. Scatter the fontina, Cotija, green onions, chorizo and thyme over the warm tart shell. Whisk the eggs in a large bowl.

Instructions to make Chorizo and mushroom Quiche:
  1. Place the crust in a round baking dish and dock it with a fork and prebake for 10 min to set
  2. In a sauté pan cook the chorizo,mushrooms and shallots.
  3. In separate bowl, whisk the eggs and cream and add the salt and pepper
  4. Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.
  5. Place in the oven and bake at 180F for 35 min. The center should come out clean.
