  2. Take 2 tsp oil
  3. Take 1 large chopped onion
  4. Prepare 125 grams chopped bacon
  5. Take 3 tsp wholegrain mustard
  6. Get 2 eggs
  7. Prepare 1/2 cup milk
  8. Take 1 pinch pepper

Instructions to make Caramelized onion & bacon mini quiche:
  1. Heat oil in large pan. Add onion, cover and cook over low-medium heat for 30 minutes, or until golden brown. Don't rush! Then transfer to a bowl to cool.
  2. Add bacon to the pan and cook until crisp.
  3. Grease two 12-hole muffin pans.
  4. Lay pastry on work surface and cut 12 rounds from each with an 8cm cutter.
  5. Mix bacon with onion, mustard and season with pepper. Place small amount in each tin.
  6. Beat eggs with milk and pour over the onion and bacon.
  7. Preheat oven 200°C.
  8. Bake for 15-20 minutes, or until puffed and golden brown. Then remove from pans and cool on wire racks.

Ok, this may sound unnecessary, but I totally vote that you put some seriously good music on. I always crank up some tunes when I'm going. What type of onion to use for caramelized onion. I recommend using Vidalia or sweet yellow onions for this recipe, since they have a slightly sweeter taste. Red onion would be my second choice.
