  4. In same skillet, butter with bacon grease. Add hash browns, spreading them up the side. Season with salt and pepper. Cook over med heat until starts to brown, about 10 min.
  5. Sprinkle remaining cheese over potatoes. Pour egg mixture over cheese. Bake until filling is firm, about 30-35 min. Let stand 5 min before serving.
