  1. Combine all sauce ingredients and set aside
  2. Boil 4 qts of water in a large pot. Add rice noodles. Boil for 4-6 minutes until tender. Drain and lightly rinse. You want some starch on them to thicken the sauce.
  3. Add 2 tbs oil to a LG fry pan or wok. Heat on med low. Add shallots and garlic. Sauté until shallots start to sweat.
  4. Add chicken, spices and vinegar. Fry until chicken is about half done.
  5. Add prawns. Continue cooking until everything is right before done. Set aside on a plate or bowl. Reserve any liquid as well.
  6. Add remaining oil to pan. Add beaten egg. Scramble egg. When done, add noodles and sauce to the pan. Stir constantly until the sauce breaks up the noodles. When sauce starts to thicken, return chicken and prawn mixture to pan.
  7. Cook until sauce is absorbed by the noodles. Plate food. Garnish with desired garnishments. Serve immediately. Enjoy
