Steps to make Spinach & Mozzarella Chicken:
  1. Heat 1 clove garlic in a little olive oil for 1 minute. Add spinach and cook down until slightly wilted. Set aside in small bowl.
  2. In same pan, add remaining clove of garlic and onion and cook with a little olive oil until tender. Add tomatoes and broth and seasonings of choice and allow to simmer for 20 minutes or until thickened.
  3. Cook chicken in a separate skillet with olive oil and seasonings of choice in batches until thoroughly cooked.
  4. Once all chicken has been cooked, arrange in pan all together.
  5. Top with cooked spinach.
  6. Top with mozzarella cheese slices.
  7. Place lid on pan and keep on low until cheese is melted.
  8. Serve on top of tomato sauce. Enjoy!
