  2. Get 300 ml coconut water
  3. Take 2 tbsp palm sugar
  4. Take 1 stalk lemongrass, crushed
  5. Get Enough oil for frying
  6. Get GROUND SPICES:
  7. Make ready 3 shallots
  8. Prepare 2 cloves garlic
  9. Prepare 3 cayenne peppers
  10. Make ready 5 peppercorns
  11. Prepare 1/4 tsp turmeric powder
  12. Prepare 1 cm piece ginger

  19. Prepare 2 turmeric leaves, thinly sliced
  20. Take 3 lime leaves, ribs removed
  21. Get 1 stalk lemongrass, use white part and thinly sliced
  22. Prepare 3 pandan leaves, sliced into 1 cm pieces
  23. Take 2 green chilies, cut diagonally
  24. Prepare 1 red chili, cut diagonally

  1. Boil chicken using coconut water then add the ground spices, palm sugar and lemongrass.
  2. Cook until the liquid is low and spices are infused, then drain chicken.
  3. Fry chicken until slightly browned (when frying, chicken should be completely submerged in oil). Add chili, shallot and garlic.
