  2. Prepare 1 stalk lemongrass (bruised)
  3. Prepare 1/2 inch galangal (bruised)
  4. Take 2 bay leaf
  5. Get 2 kaffir lime leaf
  6. Take 5 shallot
  7. Take 3 cloves garlic
  8. Prepare 2 candlenut
  9. Prepare 1/2 inch ginger
  10. Get 1 inch turmeric
  11. Prepare 5 cayenne pepper
  12. Make ready 1 tsp coriander powder
  13. Get 1/4 tsp cumin
  14. Make ready 1 tsp salt
  15. Prepare 1 tsp sugar
  16. Make ready 1 tsp chicken stock powder

Steps to make Gulai Ayam (Padang-Style Chicken Curry):
  1. Marinate chicken with lime juice for 10 minutes. Blend garlic, shallot, candlenut, ginger, turmeric, cayenne pepper, cumin, coriander and 1 Tbsp water with food processor.
  2. Heat 1 Tbsp oil on skillet with medium fire. Add the blended spices, bay leaf, kaffir lime leaf, lemongrass and galangal into skillet and stir it until fragrant. Add chicken and water, then cook it for 5 minutes until chicken is half-cooked.
  3. Add coconut milk, salt, sugar and chicken stock powder. Mix it well and simmer for 20 minutes until the sauce becomes slightly thickened. Keep stiring while cooking. Taste the sauce, add more salt if it's needed.
  4. Gulai Ayam is ready to serve with rice ✨
