The ingredients needed to make Chicken Chilli Tomato and Mozarella Bake:

  2. Make ready 1 tblsp garlic chopped
  3. Take 8 green chillies chopped
  4. Prepare 1 sprig thyme
  5. Prepare 6 tomatoes chopped
  6. Make ready 1 cup mozarella cheese grated
  7. Prepare 1 tblsp parsley chopped

Arrange half the mozzarella over the top and sprinkle with half the Parmesan. On a parchment-lined baking sheet, season both sides of the chicken with olive oil, salt, pepper, garlic powder, and oregano. Lightly coat a baking dish with EVOO.   1. Preheat oven to 230 degrees. Cut chicken breasts in half and butterfly them. Fry chicken breasts till golden and set aside and cover.
  2. In a separate pan, on medium heat fry garlic and chilli till fragrant. Add thyme and cook for 2 minutes. Add chopped tomatoes and cook for 20 minutes
  3. In an oven proof dish, place chicken breasts and pour over tomato. Sprinkle mozarella and bake for 15 minutes till golden brown. Garnish with parsley and serve warm.
